Orders open each Wednesday at 12 PM and close Sunday at 9 PM, or when sold out.

Quantities are limited by our weekly production capacity.

All pastries are made to order and shipped fresh. A confirmation email will be sent once your order is received.

Seasonal Editions

Each pastry family has a signature creation at its heart.

At select times throughout the year, seasonal editions from the Canelado repertoire may take its place for a limited release. When the edition ends, the signature returns.

Each week’s orders ship Wednesday morning.

Tracking information is provided once your order has been dispatched.

Storage

Canelés:Store in a cool, dry place. Do not refrigerate; refrigeration softens the caramelized shell.

Madeleines and Queijadinhas:Keep covered at room temperature, away from direct heat and sunlight.

Sablés:Keep sealed at room temperature in a cool, dry place.

Balas de Nuvem:Keep tightly sealed at room temperature, away from heat and humidity.

Freshness

Best within:

  • Canelés: 1–2 days

  • Madeleines and Queijadinhas: 1–3 days

  • Sablés: 3–5 days

  • Balas de Nuvem: 2–4 days

Reheating Canelés

Preheat the oven to 350°F (175°C). Place the canelés on a parchment-lined baking sheet and warm for 5–7 minutes. They are already deeply caramelized, so do not allow them to take on additional color.

Allow the canelés to cool completely before enjoying; the caramelized shell will regain its signature crunch as it cools.
